- 125g of sugar

01 Prepare the flan
Take 10 flan dishes and put some liquid caramel on the base. Beat the sugar, the egg yolks and the cream together in a bowl.
02 Fill the flan dishes
Place the flan dishes in a deep baking tray and fill each flan dish with the mixture so they are ¾ full.
Preheat the oven to 90ºC. Pour some water into the tray and cover it with aluminium foil and cook the flans for an hour.
Take them out of the oven and let them cool for 12 hours in the fridge, each one covered individually in cling film. Take them out of the mould and serve them in the flan dish.
