The secret is that none of the components “camouflages” another, so they have to be combined well.
In this pairing we suggest, you will see how the taste of the cheese and chilli peppers harmonises with the aftertaste of the wine.
01 Prepare the wine and cheese
Choose a good wine, cut the cheese and present it on a wooden board. Roncari Blue, our pure blue goat’s cheese, is internal mould ripened and made from pasteurised goat’s milk. They use a specific mould, Penicilium Roqueforti and its minimum maturation time is four months, but it reaches its peak after six months.
02 Prepare the side dish and it's ready!
Put the pickled chilli peppers in a bowl and serve the food pairing. If you like, it can also be accompanied with some bread.
