Life in the fields is not like in the stories – it’s only for the very brave. This is where the “Wolf Scarer” reigns: the toughest and bravest sheep you could ever imagine! In this place the wolves don’t howl, they cry at night.
You cannot face the “Ahuyentalobos”, the wolf scarer... If it stops in the middle of the street, you stop. If it stares you in the face, you turn and run. If the wolves approach the Ahuyentalobos, they turn and go in the opposite direction.

03 MATURITY
Minimum 8 months’ maturity.
04 TREATMENT OF THE RIND
Throughout the maturing process the cheese’s rind is basted in olive oil in order to achieve a homogenous product, both physically and in terms of its sensory characteristics.
